Honest Crab Omelette

Ingredients
- 80–100 g Honest Crab
- 3 eggs
- 1 tbsp heavy cream / full-cream milk
- 1 tbsp butter
- 1 tbsp sliced chives or spring onions
- Salt & white pepper
- 1 tbsp brown butter (optional)
- Lemon zest (optional)
Method
- Whisk eggs with cream, salt, and white pepper.
- Heat butter in a non-stick pan over medium heat.
- Pour in the egg mixture. When it starts to softly set, add Honest Crab and chives to one side.
- Fold gently and keep the center soft and custardy.
- Finish with a drizzle of brown butter and a touch of lemon zest.
Chef Notes
- Keep the crab in large visible flakes for premium presentation.
- Excellent for upscale hotels, brunch cafés, and all-day dining.
